Two small mangoes, slightly under-ripe
A large handful of fresh coriander
1/4 of a large red onion
Juice of one lime
Salt and pepper
Peel and dice mangoes, finely mince red onion and roughly chop coriander. Place all ingredients in a bowl and toss well with lime juice, salt and pepper.

One cup couscous
One cup water
One tbsp canola oil
One tsp each: cumin, garam masala, turmeric
